V60 Pourover Recipe

Though there are many different iterations and varieties of pourover brewers, we've chosen to focus on the Hario V60, an iconic pourover system that is characterized by a V-shaped cone and inner ribbing designed to control the flow of coffee. It is popular among home baristas and coffee professionals, but is a particularly unforgiving and finicky method that requires perseverance to get that perfect cup. It is best for single-cup usage and is a fantastic environmentally-friendly alternative to coffee pods. It should be noted that the V60 comes in a few different sizes with different sized filters for each, so be sure you're using the correct filters! Common attributes for coffees brewed with a V60 are a pleasant brightness, clean cup, and a smooth richness somewhere between Clever and Chemex in mouthfeel.
3:30-4:00 pull
Step 1.) Heat the water to between 200-205 degrees Fahrenheit. If using a pourover stand, place the V60 on the stand with a mug or vessel directly below. If using only a coffee vessel, place the V60 directly on top of the vessel.
Step 2.) Place the filter in the V60 and saturate the filter with hot water. Empty the rinse water caught by the coffee vessel.
Step 3.) Weigh 22 grams of whole bean coffee and grind on Medium-Fine. Place inside the pre-wet filter. Place entire V60 setup on kitchen scale and tare.
Step 4.) Pour 40 grams of hot water into the filter and start the stopwatch. Allow coffee to bloom.
Step 5.) After 30 seconds, pour an extra 60 grams of water into the filter, bringing the total on the scale to 100 grams.
Step 6.) When the stopwatch reads 1:00, pour an additional 250 grams of water into the filter, bringing the total on the scale to 350 grams. Stir the coffee slurry in the filter to agitate.
Step 7.) When the stopwatch reads between 3:00, remove the filter and discard.
