Combining form and function, the Clever is a unique brew method that combines the immersion of a French Press technique with the cleanliness of a filter brew method. Coffee steeps directly in water in the brewing cone, then drains through a gasket at the bottom. It is truly the best of both worlds in that it marries full body with clarity of cup, and does so in a way that is simple, approachable, and forgiving. 

YOU WILL NEED: 
- Stopwatch
- Kitchen Scale
- Coffee (30 grams)
- Coffee Grinder
- Clever and Clever Filters
- Stir Spoon
- Mug or Carafe
- Hot Water (465 grams)

- Hot Water Vessel (kettle or heat-safe pitcher)

QUICK RECIPE
Grind: Medium-Coarse
1:15.5 Ratio (30g coffee, 465g water)
0:00 ~ 90g total, bloom and swirl
0:30 ~ 465g total, rest

3:30-4:00 agitate and drain

STEP BY STEP

Step 1.) Heat the water to between 200-205 degrees Fahrenheit. Place the filter in the Clever and saturate the filter with hot water. Empty the rinse water by placing the Clever on top of a mug or carafe, activating the release valve at the bottom of the brewer. 

Step 2.) Weigh 30 grams of whole bean coffee and grind on Medium-Coarse. Place inside the pre-wet filter. Place Clever on kitchen scale and tare.

Step 3.) Pour 90 grams of hot water into the filter and start the stopwatch. Allow coffee to bloom. 

Step 4.) After 30 seconds, pour an extra 375 grams of hot water into the filter, bringing the total on the scale to 465 grams. Allow coffee slurry to rest. 

Step 5.) When the stopwatch reads between 3:30 and 4:00, place the Clever on top of a mug or carafe, activating the release valve at the bottom of the brewer and allowing the coffee to drain into the coffee vessel.
